Ingredients

- 2 large chicken breasts (cut into small pieces)

- Salt – ½ tsp

- Vinegar – 1 tsp

- Cornflour – 2 tbsp

- Oil – 2 tbsp and for frying

- Garlic – 3 cloves (chopped)
-
- Ginger – 1 small piece (chopped)

- Sun Wah Chilli Oil with Chicken and Black Bean Buy Chilli Oil with Chicken and Black Bean – 2 tbsp (You can increase or decrease the quantity according to your preference)

- Soy sauce – 1 tsp
-
- Tomato ketchup – 2 tsp
-
- Red and yellow bell peppers
- Spring onion for garnishing
Instructions

First, make your chilli paste. In a bowl add crushed garlic, ginger, vinegar, chilli oil, salt and pepper. Mix well and fry in a pan for 5 min. The add soy sauce and ketchup, mix well and fry for another 5 min on medium heat.

Chop your chicken breast into small pieces and fry in oil for about 5 min. Then add chopped red and yellow peppers and fry for few more min. Add your chilli paste and mix well until its evenly coated.

Mix 2 tbsp cornflour in a cup of water and add it to the pan. Add more water if needed. Keep mixing and cook on simmer for about 20-25 min. Cook until the gravy thickens. Adjust water according to your liking.

Serve hot with fried rice or steamed rice. Enjoy!
